После нормандского завоевания диграф "th" постепенно вытеснил букву "þ".
Так, "þu" стало "þou", а позже "thou", долгий звук /u:/ было принято передавать буквосочетанием "ou", ведь обычным "u" отображали звук [y] (как ü в немецком), особенно в юго-западных диалектах.
Thou постепенно выходило из употребления, пока совсем не исчезло из стандратного языка.

К слову, в англосаксонскую эпоху с выбором местоимений всё было очень просто.
Если человек один - þū /θuː/
Если двое - git /jit/
Много людей - ge /jeː/
